Happy 2nd Birthday Dexter!

That’s right folks, it’s Dexter’s 2nd birthday today!  I can’t believe it has been almost 2 years since this little guy came into my life.  He really is such a joy, and I’m so happy to have him!

On his last birthday I baked him a kitty friendly cupcake, only to learn later on that cats are missing the “sweet” taste buds!  I felt silly, so for his 2nd birthday I bought him some fancy kitty food.  He’ll also be getting a brand new climbing/scratching tower this weekend!

Am I the only one that really loves kitty birthdays, or do any of  you do anything special?

Kitten Update!

Hey everyone! I wanted to update you on the kitty rescue mission.  Oh what a journey it has been!

We originally were able to get the three kittens in the photo, and every day since I have been trying to catch the other two.  However, these little dudes are adjusting well.  They are insanely playful, love to eat and drink loads, and love to have cuddle mountain parties!

This morning I went to check on them and the little runt (the one in the middle of the picture) was very lethargic.  I decided to take her (yes! it’s a girl!) to the vet just in case.  While we were there, the vet prescribed her some nutrition supplement to help with weight gain, and some deworming medicine.

On a sadder note, it seems like all of the kittens have fleas.  The vet gave me Capstar oral medication that will kill the adult fleas, and in the meantime we are being very careful and washing/vacuuming everything.

The next step will be testing them for FIV/kitty leukemia, and then we’ll start vaccines once they are old enough.  After that it’s off to find forever homes!  I’m still on the search, so if you know anyone in the Atlanta area who would love a sweet kitty, shoot me an email!

Finally, I want to take a moment to thank each and every one of you for donating or spreading the word.  It has been such a journey for these little guys and it definitely doesn’t stop here.  Unfortunately the flea medication took quite a chunk out of the kitty fund, so any more donations will be more than appreciated!  In fact, I have a little treat up my sleeve for anyone who donated or donates in the future!  Thank you again!

Can you help these kittens?! (please read even though it’s very wordy!)

Hi there! Sorry for the silence on the blog lately, but it is all for good reason!  You see, on Friday or so I was speaking to one of my neighbors and she casually mentioned a litter of 5 kittens that were hanging around her front porch.  Since I am a HUGE cat lover, obviously I had to take a look.  That was probably a big mistake,  because now I’m in love, and I have made it my mission to get these kittens their vaccinations, spayed/neutered, and to loving forever homes.

Being outside is quite dangerous for these little babies because they are being fed random items from the neighbors, even chicken on the bone, and people tend to litter and I would hate for them to ingest something poisonous.  They are so young and truly need proper nutrition and care, and I believe to have the best life, they need to be brought inside.  I live on a very busy street, and there are quite a few raccoons and possums nearby, and I can’t bare the thought of anything happening to them.

Unfortunately, getting all of the shots for each kitten, and getting them spayed/neutered when the time comes is going to cost quite a bit of money.  That’s where I am hoping some of you can help.  I hate asking for donations, but I simply can’t afford this undertaking on my own.  If you have anything to give, literally a dollar would help, it would mean the world to me and I’m sure if these kitties could talk, they would personally thank you!

If you can’t donate, that is totally fine!  I would love if you could at least pass the world along, and hopefully we can get these kittens taken care of!  Animal overpopulation is such an issue, and I am just trying to do my part to help out,

Here is an Instagram photo of the runt of the litter.  This little guy has me a teeny bit worried, so I really want him to get checked out.

After doing loads of research, I have found it is going to cost about $20-$30 per kitten for their initial shots (not including rabies vaccines, which they will get when they are older), and an additional $30-$50 to get each one spayed/neutered.  That’s a total of $250-$400 (not including microchips)!

Easy Brussels Sprout Side Dish!

I’ve never liked Brussels sprouts.  Well, let me rephrase that.  I had never tried Brussel sprouts.  Recently, I tried them for the first time, and I was in love.  My mom made them with a honey mustard sauce, and it was ridiculous.

So, after a quick trip to the farmer’s market, I decided to try my hand at making them my way.  I’m insanely addicted to anything balsamic vinegar, so here are some delicious balsamic vinegar Brussels sprouts!

Ingredients:

12 Brussels sprouts washed with outer leaves pealed then halved

Olive Oil

Balsamic Vinegar

1 clove garlic, minced (or more if you want a more garlic-y flavor)

Salt and pepper to taste

Directions:

1.  In a bowl, toss the sprouts with the olive oil, garlic and balsamic vinegar.  Let it sit for a while (about 10 minutes) so the sprouts absorb lots of flavor!

2.  Lightly oil a baking sheet, then place the sprouts cut side down.  Cook at 375 degrees Fahrenheit for about 20 minutes.

3.  Turn the sprouts and cook for another 8 or so minutes.

I hope you enjoy this easy side dish!  I love how simple it is to change up the recipe and make it your own!

The Most Wonderful Banana Bread Recipe (with chocolate too!)

Get ready for a big treat!  Literally.   My mom has been baking this banana bread for as long as I can remember, and it is my absolute favorite dessert in the whole world!

No matter what mood I’m in; when I smell this banana bread baking, I get all happy!


Ingredients:

1/2 cup butter (room temperature)

1/2 teaspoon salt

1 cup sugar

1/4 cup sour milk (1 teaspoon vinegar in 1/4 cup milk)

2 eggs

2 cups flour

1 teaspoon baking soda

3 extremely ripe bananas

chocolate chips

Directions:

1.  Preheat the oven to 350 degrees Fahrenheit and grease a loaf pan.

2.  Using a mixer, cream the butter and sugar together.

3.  Add each egg one at a time, then add the milk. Combine.

4.  Combine the flour, salt and baking soda in a separate bowl and add to the mixer a little bit at a time.

5.  Once the dough is combined, add the bananas and chocolate chips.

6.  The recipe calls for baking the bread for 50 minutes, but I find that is never long enough.  I usually take it out after about an hour. Always do the skewer test to make sure it has cooked through!

7.  Enjoy!
