Thank you to everyone who entered, and hopefully I can host more awesome giveaways in the future!

I have tried so many different chocolate chip cookie recipes.  Some were good, some were just okay, and some were great but had really expensive or hard to find ingredients. With that being said, I think I have finally found one that I love.  It is my own little combination of different ingredients from different recipes, and I hope you like it as much as I do!

Lexy’s Chocolate Chip Cookies

Makes approximately 32 5-inch cookies (make them big, that’s the best way to eat them anyway!).  This amount is perfect for a party or whatnot, but if I just feel like having some cookies in the house, I”ll half the recipe.

Ingredients 
1 pound unsalted butter
1 3/4 cups granulated sugar
2 1/4 cups packed light or dark brown sugar
4 large eggs
6 cups flour
1 tablespoon salt
2 teaspoons baking powder
2 teaspoons baking soda
1 tablespoon pure vanilla extract
1-2 bags of bittersweet chocolate  chunks (not chips, chunks is where it’s at!)

Directions
- Preheat oven to 350 degrees. Line baking sheet with parchment paper.
- In the bowl of an electric mixer, cream together butter, granulated sugar and brown sugar.
- Add eggs, one at a time, mixing well after each addition.
- Reduce speed to low and add flour, baking powder, baking soda, salt, vanilla, and chocolate chips; mix until well combined.  At this point, feel free to taste the cookie dough, and if you have the will power to not taste, I applaud you.
- Scoop cookie dough onto prepared baking sheets, about 2 inches apart.
- Bake until lightly browned, but still soft, about 20-22 minutes.
- Cool (I can never wait for this step, cookies are just too good right out of the oven!)

There is so much to celebrate around these parts; the new shop, the healthy and happy kittens, summer starting, beginning physical therapy, and just overall enjoyment of each day!

With that being said, I want to share with you some pictures of the kittens.  They have grown so very much, and are quite amazing.  Not a day goes by where I am not laughing at one of them, and good fortune seems to have come…I might have found a home for two of them!  I was incredibly nervous of having to split them up, so this is very very happy news!

Well, it is absolutely about time I fill you in on the very busy goings on in my life, so here it goes!

First things first, let me tell you about the medical issues that I have been alluding to lately.  If you have been a reader for a while, you know that I had spinal fusion surgery at 16, and have pretty much been fine ever since.  However, about a year ago I started having pretty terrible pain in my back and legs.

So, thinking there was an issue with my spine and the two rods/tons of screws, I was checked out by a surgeon, took new X-rays, and had an MRI.  Unfortunately, it was not obvious by any of these fancy medical means as to what the problem was/is.  Fast forward to seeing many different doctors, and having many different tests, the source of my pain is still undetermined, but I will be starting physical therapy this week, so hopefully that will help.

Next, I have been working super duper hard on a new blog design, and I can’t wait to debut it shortly.  Since I was away for so long, this has been put on the back burner, but it is being pushed to the front of my to-do list, and I have a very special treat to go along with it!  I wanted to simplify the focus of the blog, and I think the design mirrors that as well.

Finally, I have also opened a small vintage curiosity Etsy shop, Gallymogger Antiques and Oddities.  I am a collector and lover of vintage and oddities at heart, so I decided that opening a vintage shop would be a great fit!  I know that stock is low now, but hopefully I’ll be adding fun new items weekly!

Hi there!  Long time no talk!  Unfortunately I was away from my computer for 3 weeks due to some medical tests, and visiting family!  I’m back now with a vengeance, and I can’t wait to share all the fun things that I have been thinking about and working on!

First though, I think it is due time for another update on those little kittens!  They have grown so much!  The boy (Brother) and bigger girl (Coraline) are literally twice the size since I left.  The little runt (Madeline) has also gotten a lot bigger!  She is thriving and keeping up with her bigger brother and sister.  It really is amazing to see how far she has come.

Dexter has become so attached to them, it is really sweet.  He loves to play and cuddle.  I’m so proud of him for being such a great big brother!  He’ll cry if he can’t get to them, and he runs around just like he’s a kitty too!

Before I left, each kitten was tested for feline leukemia and AIDS, and all three came back negative!  I was thrilled, and want to thank each and every one of you that spread the word or donated.  It really helped more than you could imagine.

As you can see in this picture, Madeline still has some issues with her left eye.  It doesn’t seem to affect her ability to play and see, but I’ll be taking her to the vet soon just to be on the safe side.  They will also be starting their first round of vaccines shortly.

This is Brother (for the moment)!

We are still looking for forever homes for two of the kittens, so if you know anyone in the Atlanta area that would love to become a kitty mom or dad, that would be amazing!
